Lamb Roast with Truffled Marbled Potatoes
Ingredients:
- 1 kg Margra Lamb Leg, tied with butcher's twine
- 10 cloves Garlic
- 4 springs Rosemary, chopped
- 1 spring Thyme Leaves
- 2 tbsp Maven Pure Butter - Salted, melted
- 2 tbsp Primeo Olive Oil Pomace
- 1/2 kg Marbled Potatoes
- 1 tsp Iodized Fine Salt
- 1/2 tsp Ground Black Pepper
- 2 tbsp TopChef Truffle Flavored Dressing
Procedures:
- Preheat oven to 160°C.
- In a bowl, combine garlic, rosemary, thyme leaves, Maven Pure Butter - Salted, and Primeo Olive Oil Pomace. Mix well.
- In a 9"x13" baking pan, rub the Margra Lamb Leg and potatoes with aromatics. (Optional: insert aromatics into the lamb meat.)
- Lay the lamb on top of marbled potatoes and bake for 1 hour.
- Remove lamb from the pan and transfer onto a platter.
- In the baking pan with marbled potatoes, add TopChef Truffle Dressing and side potatoes with lamb roast.
