
Berry Stuffed Turkey
Ingredients:
- 20g TopChef Crispee Marinade Mix, diluted according to packaging directions

1500g Whole Turkey or Chicken

40g Maven Pure Butter - Salted

3 pcs Loaf Bread, ends trimmed and cut into cubes.

50g Onion, chopped

50g Carrots, diced

30g Celery, diced

15g Raspberry Fruit or Dried Cranberry

1g Tarragon, chopped
- 1g Paprika, roasted

10g Maven Pure Butter - Salted
Procedure:
1. Marinate turkey or chicken for 4 hours inside the chiller. Set aside.2. 2.
Melt the butter in pan and toast cubed bread. Set aside.

In the same pan, sauté onion until softened.
4. Add carrots, celery, cranberry, tarragon, and paprika. Mix well.
5. In a bowl, combine stuffing ingredients. Mix well.
6. Preheat oven to 180°C
7. Stuff turkey or chicken with cranberry mixture.
8. Transfer turkey or chicken onto a baking rack and bake
for 30 minutes.
9. Remove turkey from oven and brush with the melted butter.
Continue to 190°C roast until fully cooked for 15 minutes and serve.
