Berry Braised Pot Roast

Ingredients:

  • 1 kg Black Onyx Beef Rump
  • 50g Maven Pure Butter - Unsalted
  • 30g Onion, chopped
  • 50g Celery, diced
  • 100g Carrots, large chunks
  • 30g Andros Professional Strawberry Bake-Stable Filling
  • 30g Tomato Paste
  • 150g Red Wine
  • 1L Beef Stock
  • 1g Oregano
  • 1g Thyme
  • 2g Iodized Fine Salt
  • 1g Pepper
  • 100g TopChef Instant Mashed Potato Mix 

Procedure:

1.  Using a steel pot (or cast iron pot), sear beef on each side until brown and
     crisp. Remove beef from pan and set aside.
2.  In the same pan, melt the butter and sauté onion, celery, carrots, and
     the
strawberry filling together.
3.  Add tomato paste, red wine, and beef stock. Keep on stirring for 5 minutes.
4. Bring back beef, add oregano, and thyme. Let it simmer under low heat until
     beef is fork tender.
5. Season with salt and pepper.
6. Serve on top of mashed potato.
