
Steak Garden
Ingredients:
- 10 g Gold Mill Black Crumble
- 5 g Instant Coffee Black
- 10 mL Takam All-Purpose Liquid Seasoning
- 5 g Brown Miso Paste
- 3 pcs Cauliflower Florets
- 1 g Ground Pepper
- 1 pc Satsuma Gyu, cooked according to desired doneness and sliced
- 20 g Savory Matcha Mousse

Savory Matcha Mousse:
- 300 g Soft Tofu, drained and water squeezed out
- 3 g Daily Blends Matcha Milk Tea Flavor Mix
- 10 mL Takam All-Purpose Liquid Seasoning
Procedures:
1. In a small bowl, combine the Gold Mill Black Crumble and black coffee. Mix well.
2. In a medium-sized bowl, combine Takam All-Purpose Liquid Seasoning, brown miso paste,
and cauliflower. Mix well to blend in flavors.
3. In a pan, brown cauliflower until fully cooked. Set aside.
4. To assemble, mound coffee chocolate crumble into desired platter and top with sliced
Satsuma Gyu.
5. Side Satsuma Gyu with cauliflower and a scoop of matcha mousse.
6. Arrange flowers around the plate decoratively.
Savory Matcha Mousse:
1.
Using a mixer with whisk attachment, combine savory matcha mousse ingredients until
smooth.
2. Transfer into a sealable container and refrigerate until to be used.
