Milk Tea Boba Bread
Ingredients
Milk Dough
- 2 1/2 cups Bread flour, unbleached
- 1/4 cup Sugar
- 1 tsp Salt
- 1 Tbsp instant yeast
- 3/4 cup Mlekovita Full Cream Milk
- 1 large Egg
- 1/4 cup Maven Butter Unsalted, melted
Milk Tea Filling
- 1/4 cup Brown Sugar Milk Tea Drink Mix
- 2 Tbsp Maven Butter Unsalted
- 1/4 cup Prepared Tapioca Pearls
Sweet Cream Topping
- 1/2 cup Royal Victoria Whipping Cream
- 2/3 cup Royal Victoria Cream Cheese
- 1/4 cup FarmBrothers Condensed Creamer
- 1/4 tsp Salt
Procedure
Dough
- Combine all the dough ingredients, then mix and knead until a smooth, elastic dough forms
- Shape the dough into a ball, and let it rest in a lightly greased covered bowl for 60 to 90 minutes, until puffy but not necessarily doubled in bulk.
- After the dough's initial rise, divide it into 6 equal pieces. Flatten each piece into a rectangle, spread some milk tea filling inside, then fold the short ends in towards one another like a letter.
- Flatten the folded pieces into rectangles again and, starting with the short end, gently roll them each into a log, taking care for the filling not to go out
- Grease a 9" x 5" loaf pan with Baker's Choice Baking Spray. Place the logs in the tray, seam side down, and side by side (or with your desired configuration).
- Cover the loaf and allow it to rest/rise for 40 to 50 minutes, until puffy.
Milk Tea Filling
- Mix the Brown Sugar Milk Tea Drink Mix and Maven Butter.
- Whip until creamy.
- Add in the cooled prepared Tapioca pearls. Set aside
Sweet Cream Topping
- Combined chilled Royal Victoria Whipping Cream, Royal Victoria Cream Cheese, and FarmBrothers Condensed Creamer in a blender.
- Add a pinch of rock salt and blend or whip until firm.
- Place mixture in a bowl and set aside.
