Ube Hopia

Ingredients:


Dough 1: 

  • 300 g Bread Flour
  • 200 g  Soft Flour
  • 5 g Salt
  • 40 g Sugar
  • 20 g Simple Syrup
  • 150 g Primeo Soya Bean Oil
  • 200 g Water
  • 10.5 g Baker’s Delite Flavormate Ube
Dough 2: 
  • 150 g Soft Flour
  • 100 g Purico Shortening
  • 4 g Baker’s Delite Flavormate Ube
Ube Fillings:
  • 400 g Baker’s Delite Flavormate Ube
  • 40 g All Purpose Flour

Procedures:

1. Preheat oven to 180°C.
2. Mix all dry ingredients of Dough 1 in a bowl, followed by liquid ingredients.
    Mix by hand until dough ball formed, rest for 30 minutes.
3. In a separate bowl, mix soft flour and Purico Shorteningthen add Baker’s Delite
    Flavormate Ube.
4. After 30 minutes, flatten the Dough 1 using a rolling pin to a square that is not too
    thin nor too thick.
5. Spread the Dough 2 to cover the Dough 1 then fold using the letter fold method.
6. Flatten the dough using a rolling pin and shape into square that is not too thin
    nor too thick, then fold using the letter fold method, rest for 20 minutes.
7. Flatten the dough and divide into two, make a baston then rest for 15 minutes.
8. To prepare ube fillings, in a bowl, combine Baker's Delite Flavormate Ube
    and all purpose flour. Mix until well blended. Set aside.
9. Cut the dough to 40g each, roll, and add 25g ube fillings and mould into round
     shape using a cookie cutter.
10. Brush with egg wash and bake for 13-15 minutes until done.
