Heat oil in a pan, sear pork pata for 5 minutes each side and set aside.
In the same pan, saute onion, garlic and black pepper, transfer to pressure cooker together with TopChef Pinoy BBQ Sauce, soy sauce, water and bay leaf.
Pressure cook for 25 minutes.
Add brown sugar, banana blossom and black tausi. Stir. Let it simmer until the sauce reduces to half.
